Simplify Needs To Enlighten

It is completely impossible to accept or even say that body could play any helpful role in enlightenment beyond the mind. We have by far known that only the mind helps in being enlightened or being one with the universe.

By dropping or ceasing to have any thoughts and unwrapping the different layers of mind’s conscious can help in successfully being enlightened, is the fact we all have known. But could body help in enlightenment is really a debatable and quite confusing thing.

Am also researching more on this myself , as only yesterday i came up with this thought that body can play a very crucial role in helping me enlighten a bit.

As i lay on my bed in afternoon having nothing to do , no work , no chore not even a book to read or play some game, i just kept wandering and dazing around the walls of my room, the clothes hanging , the wardrobe’s mirror, the new cooler, the curtains half drawn over the window and half opened.

As i watched all these i thought “how free i am” and then some more correlating thoughts followed this one, like how really free i am, not working or even doing any home activities, am i ashamed of not having a job or am i that shameful to get household chores done by the maid and not myself .

I kept moving with those thoughts in flow, am so free, people would die to get this free-ness in their lives and here i am all free and doing nothing absolutely nothing, i have a full stomach, with full clothes on, and a soothing room temperature that caresses my open hands , feet , face and my long hair.

Ahh how beautiful the life is here just laying around and gazing what’s in and out of that window. the thoughts still coming, i realized how free i am , i don’t need to work, i don’t need to compete, or i don’t want t to study any further to let other’s know am still in the race, I actually don’t feel the need or desire to do any of that anymore.

What has happened, is anything wrong with me,i don’t feel the urge to get up and ‘DO’ , i feel complete this way, nor am i hungry nor am i shivering. Then what’s is it that makes me feel nothing, i thought even more and realized that the needs of my body are fulfilled , the art is to fill the stomach either with rice or pasta is a choice, the body need’s clothes, its a choice to have comfortable or styled clothes, the body needs air , should it be fan or air conditioner is again a choice.

The way body is satisfied and the needs controlled is the only way to reach out , once the body is fine there’s a way to reach beyond, the mind automatically shut’s down the desires when the needs are met in simplicity. the body craves for food it doesn’t tell you, that you need a pizza to feed the hunger, it never did, its the mind who thinks about giving taste or the choice of food, the task is the same to fill the empty stomach, it could be with a bowl of rice too.

So when we have the bodily need’s are met with simplicity, we no longer have desire’s anymore, the mind slowly starts to drop thoughts that accumulate desires and urges, and then becomes zero at one time, there are no thoughts anymore and thus the mind ceases to happen anymore, the emptiness of thoughts is replaced by consciousness, the body succeeds in arriving at this consciousness where the person seeking enlightenment becomes more awakened and aware about his inner self , there is no more the need to look around for anything , everything is there in itself.

When body is sufficed with no desire, the soul comes to power and mind no longer exists, the soul directs the movements of mind that lead it to consciousness and to the path of enlightenment. There is then, absolutely no need to deliberately stop the flow of thoughts, it will happen automatically when the need’s of body are met with simplicity and there is not even an inch of desire left to think or act upon.

Because today there is such a mad rush to get beautiful and fair skin that we ignore the basic knowledge of what to use and what not to use on our delicate skin.

Girls as old as 5 years today use face wash, beauty soaps and fairness creams and they keep doing it all throughout their lives, and in the process their skin becomes so hardened that it can tolerate more chemicals, bleaching agents and more harsher acids…

Crispy Cheesy Cutlets

Standard

Ingredients :

Boiled potatoes – 4 to 5

Boiled Peas – a handful

Boiled Carrots – 1 chopped

Onion – 1  chopped

Capsicum – 1 small chopped

Green Chilli – 1 chopped

Coriander – chopped 2 tbsp

Bread Crumbs – of 8 to 9 slices For mixing and binding keep separately

Cheese singles- 3 nos each slice having 4 equal rectangles

Egg – 1

Salt to taste

Red chilli Powder -1/3rd-tbsp

Coriander powder -1/3rd tbsp

garam masala -1/3rd tbsp

Chaat masala – to taste

Cooking oil – 1 and a half cup

Method :

In a large bowl put boiled potato’s , to this add bread crumbs, chopped onion, carrots, boiled peas, carrots , capsicum, green chilli’s ,and coriander leaves, mix this with a spoon . After this add coriander powder red chilli powder, garam masala, salt, and chaat masala. Now with clean hands mix all this into a tight paste so that all the ingredients bind together ,if needed add more bread crumbs that will make the bind strong and ingredients don’t fall apart while frying. In a large bowl break the egg and keep the egg white for coating ,and keep some bread crumbs on a large plate to make cutlets crispy. Also keep the cheese ready for filling in between the mixture of cutlets.

Heat oil in a wok , now make smooth rolls from the mixture and make a deep crest in between add the long cheese slice into it and bind them with the mixture from sides and with hands shape into long rolls , now dip this roll into egg white from all the sides and take it out and spread and roll it over small bread crumbs , so that they stick to it from all sides . Now fry them in the oil till golden brown. Repeat the same for the whole mixture, you can also store this mixture for later use.

Sprinkle some chaat masala and butter over the cutlets and serve hot with tomato ketchup or chutney.

Tawa Paneer Tikka

Ingredients :

Paneer : Cut into cubes

Onion 1 – Cut into slices

Tomato 1 – Cut into slices

Capsicum 1 – Cut into Slices

Curd – half Cup

Ginger Garlic and Onion paste

Red Chilli Powder – 1/4 tbsp

Cumin Powder – 1/4 tbsp

Coriander Powder – 1/2 tbsp

Chaat masala- 1/2 tbsp

Amchur Powder ( Dry mango Powder ) – 1/4 tbsp

lemon- 1

Salt – To taste

Green Chilli – 2

Coriander Leaves – Cut about 2 tbsp

Oil – 2 tbsp

Method :

First in a large bowl add cut paneer cubes, capsicum, onion, tomato with  garlic ginger and onion paste , curd , red chilli powder, dry mango powder, coriander powder, cumin powder and mix well . Keep aside in the refrigeration for about half or an hour.

Then take it out and add salt to this mixture , now put oil on a pan ( tawa ) and heat for about a minute , now spread the mixture all over the tawa and fry , keep tossing and rotating the paneer cubes , capsicum, tomato, and onions. Cook them till they give a little brown or black color with that look of completely fried.

Once complete take them out on a plate and garnish with chaat masala ,coriander leaves, lemon juice and green chilli.

Healthy Salad

Method : Boil Some beans , corn, carrot, and slice them into small bits, In Bowl now put these , also add sliced cucumber, and some sprouts: moong or chana . Mix all the ingredients and garnish with some cheese shreds , black pepper and a pinch of salt. Its great , light , simple and very healthy.

A very Happy Karva Chauth to Everyone.

On this beautiful day that celebrates vows of togetherness, love and prayers for long life and good health of the spouse, i pray that this bond goes on forever and for agle saat janam tak.

Here’s what happens on Karva chauth , we keep the fast all day and break it only after seeing the moon through a sieve and then our husband through that sieve  after which the hubby ends the wife’s day long fast by offering her water and sweets. Women apply menhndi on their hands and feet and do all the saaj shringar like i have applied mehndi today on my OWN for simple budget reasons, and would wear my wedding lehnga as its my first karva chauth after marriage so typically ill be dressed and decked up like a bride today as well. Wow.

In the afternoon i will do the puja with karva filled with water and some rice ( earthern small pot that has a little opening which is closed by cotton ) and another pot of metal filled with water (pital ka lota) as i live alone so ill move the two of them side by side in circular direction without touching their surface. over that ill keep some rice , wheat and sweets, and also stick the calender of karva chauth katha where the vrat katha is written and decorate it with garlands and do the tilak and puja of karva by decorating it with red thread and red vermilion with a swastik. Ill put a bright saree and suhaag samgri along with it as the daughter in law offers some presents and sweets for their mother in law on the occasion of karva chauth. I will preserve them for her till the time i meet her , the puja thali is decorated with diya , roli, chawal, haldi, heena, some makeup, bangles, and everything .

After the puja i will prepare some dishes like alu gobi , halwa, puri, raita, dal, chawal for the evening , though these dishes are prepared by mother in law ,as am living alone ill prepare them myself and will wait for my husband to return from work then after the moonrise i will do the puja again and put tilak on my husbands forehead and see him through the seive in which i will keep a lit diya, after that i will offer the karva water to the moon and pray for my hubbys good health and long life. then i will touch his feet and seek his blessings and end my fast by eating sweets and water from his hands.

 

Tangy Spicy Chutney

Ingredients.

1 large Onion chopped

2 tomato chopped

6 to 7 green chilly’s choppedImage
1/2 tbsp Mustard seeds

4 spoon mustard or cooking oil

20 to 25 curry leaves

salt to taste

pinch of red chili powder

Method :

Heat Mustard oil in a kadhai , lower the flame and add curry leaves and mustard seeds let them splutter now add chopped onions and green chilly and keep tossing and saute for a minute, now add chopped tomato’s and pinch of salt and red chilli powder and saute till tomato are boiled and gives out gravy in chutney. take the chutney out of kadhai and serve with hot paratha or additional with roti sabzi.

Kadhai Paneer

tomato big slices – 1
capsicum big slices -1
ginger & garlic paste  -1 tbsp
green chillies- 2
dried red chilli -2
corriander seeds- 1bsp
Red chilli powder -1 tbsp
coriander powder -2 tbsp
garam masala-1/2 tbsp
salt -as per taste
coriander leaves chopped -2 tbsp
oil -2 tbsp to fry vegetables
oil -2 tsp to cook the whole sabzi
half cup water / 2tbsp milk cream
Method
Heat oil in a kadai and fry big sliced onions, tomato, capsicum, green chillies, and paneer seperately and keep aside. Now in the same oil add some more oil if needed and heat dried red chillies broken into two, and crushed coriander seeds,  sauté for half a minute. Then add ginger garlic paste and cook for a minute , after this add coriander powder, red chilli powder and salt , you can add milk cream to this masala or some water, if you like i add to make the gravy thick. then add all the vegetables one by one except tomatoes  and sauté for a some time then add tomatoes. Cook over high heat till the oil separates. Add paneer and and half  cup of water only if needed to get some heavy gravy. lastly add garam masala powder over the dish and let it Cook, covered, over low heat for five minutes. Serve hot, garnish with chopped coriander leaves over the dish and serve with chapatti or paratha.

Cheesy Potato Bread Rolls

Boiled Potato’s large -4 if Small then 6

Cheese Spread or slices (3)

Chopped Onions – 1 to 2

Chopped Green Chillies – 2

Grated ginger – a pinch

Red Chilly Powder -1/2 tsb

Little pinch of Coriander Powder

Bread slices as per Filling

Coriander leaves – 1 tbsp

Oil

Salt

Method:
In a bowl, mash the boiled potatoes add cheese ,chopped onions, green chillies ,ginger, coriander leaves, red chilly powder and coriander powder and salt and mix and mash this in the bowl with hands . it will mix finely then.
Then take a plate and pour some water into it, take our bread slices and soak the bread in the water and press them between hands so all water goes out, be careful not to squeeze it much and let it be in its original shape , then with a spoon take potato and cheese filling and put it over the bread and slowly wrap the bread around the filling closing it from all the sides like a roll . make as many you want in the same way and keep them aside on a plate.
Now in a pan or kadhai heat oil (refined or mustard ), and simmer it when heated , now slowly and carefully put the rolls into it as many as 2 or 3 at a time depending on the size of your kadhai or pan . Now keep frying them until brown . take them out onto a tissue paper . serve hot with Sauce or green chutney .

Food Food Food

Of lately I ve been experimenting with food and new recipes that i have cooked in the past and some that i haven’t cooked but tried them here in my hubby’s home and in my own personal kitchen.

The recipes i cook boost my confidence and cooking skills so much that i even post the pics of the meals i make on Facebook which is appreciated by my friends and relatives and on the advice of My dearest Friend Pooja and My beautiful dee Rachna, I have added the Food category to my word press blog that describes the recipes of the Food i cook along with the pictures of the cooked dish.

Since there’s no dearth of good recipes i may just limit to posting pictures and share recipes of some of the dishes that may taste unique or somewhat different. Of course that would be me or my hubby to taste but food is not all about tasting its about the look and feel of it , the colors it has and the aroma it gives.

So much to be explored, hope this food journey may lead to unique experiences and some more observations about spirituality and senses.
